Butcher Man

Reports To: Head Chef / Kitchen Manager

Key Responsibilities:

• Receive, inspect, and store meat and poultry according to safety standards.
• Cut, trim, bone, and portion meat into specified cuts (beef, lamb, pork, poultry).
• Operate and maintain butchery equipment (bandsaw, mincer, slicer).
• Control waste and ensure optimal yield from carcasses.
• Maintain cold room temperatures and cleanliness per HACCP.

Qualifications & Experience:

• Trade certificate in butchery or 2+ years hands-on butchery experience.
• Knowledge of meat cuts, aging, and marination techniques.
• Food handler’s certificate.

Work Hours: 8

Experience in Months: 24

Level of Education: professional certificate
